Having started his career in 1979 as a first commis, Ewais went on to hold a number of roles at various international hotel chains in and outside Egypt including:, Winter Palace in Luxor, Sheraton, Savoy, Intercontinental Cairo , Palace Hotel Gstad in Switzerland, Eschlibck Hotel in Austria, Movenpick in 3 different countries Genève, Check Republic and in Egypt.

Ewais joined Rezidor in 2005 as an Executive Chef for Radisson Blu Resort El Quseir, then went to Radisson Blu Alexandria and recently joined Radisson Blu Hotel, Cairo Heliopolis.

Ewais holds a high diploma from Egoth Hotel School and attended a huge number of training and have a certificate diploma from Cornell University and have awarded medals in many international cooking competitions.
